Since more than 20 years, we have been developing artificial olfactory systems based on electronic instrumentation systems, gas sensors and machine learning techniques for application in different applications (environment, food and beverage, health, safety, etc.). In recent years, these systems have made significant progress and it is now time for their deployment in society, as happened years ago with artificial vision systems, personal assistants and touch systems.
